Happy Weekend to you guys! Since it’s Saturday morning I actually have time to get busy in the kitchen and create my scrumptious blueberry pancakes. Now, here I am sharing it with you.
You would need a pancake pan or frying pan would do too, kitchen towel, mixing bowl, measuring cups and the following ingredients:
2 cups self raising flour
1/4 cup ground almond
1 tsp baking powder
2 medium free range eggs
2 tbsp melted butter
2 cups milk
Maple syrup/Honey/Blueberry Jam
Mix all the ingredients together in a bowl, make sure that there are no lumps in the mixture. Let it rise for 5 minutes and get cooking. Place pan over medium heat, put a block of butter and let it melt. Once melted wipe pan with kitchen towel. Be careful the pan is really hot at this stage, I recommend using a pair of tongs. I use 1/3 cup of pancake mix for my cooking portion, only add 4 to 6 blueberries in each pancake, otherwise you’ll end up with a “hole-ly” pancake. You don’t want that!
Pour cooking portion on the pan cook for 20-30 seconds. To avoid burning your pancakes, do not leave it cooking, check it and once it’s golden brown flip it over for the other side to cook. Stack 3 to 4 pancakes or more if you like, drizzle with maple syrup or honey then topped with blueberry jam or more fresh blueberries (or both).
This recipe is good for 4 people, if you have leftovers you can keep it in the fridge overnight. Here are some photos of me cooking this morning.
