“Super Nutty Bar” To Give You Boost


I am sharing my new recipe. The name pretty much suggests what it is. I came across “Nut Granola” on The Meal Revolution by Tim Noakes, made it multiple times for my daily breakfast – a new favourite in the household. Now, I seek a snackbar that does not disturb my new found diet. Enter the thought of making Nut Granola to Super Nutty Bar.

Most of the ingredients can be found in your pantry, if not they’re easily accessible from the Supermarket or your local whole food store. I changed the ingredients a bit, added a few more items and omitted some too which to my surprise did not affect the taste as much. Cinnamon is optional, I did not include this ingredient on the one I just recently made and the snack bar still taste good!

This will surely be your favourite pick-me-up snack on the way home from work or just before dinner time. It can also be a substitute for breakfast granola when you’re running late – as I often do.

How to Make

All ingredients can be bought pre-chopped or flaked, however having a food processor sure can come in handy to chopped up tree nuts like almond, pecans, walnuts and hazelnut. Feel free to add apricots, cherries and berries on the food processor too. I do prefer to chop my apricots and have my dried cherries and berries whole to enjoy their sweetness. I added these fibre rich fruits to help me feel full for longer.

Place all ingredients in a large mixing bowl. Add in cinnamon, Quest Nutrition Vanilla Milkshake Powder or Powdered Milk, vanilla extract, desiccated coconut together with the egg and milk mixture. Mix well and make sure that everything looks sticky. I used a large roasting tin because it’s the only large pan I have at home, you can use a large baking pan (9×13″) if you have it. Line with parchment paper to prevent the mixture from sticking and to remove it easily after cooking.

Distribute mixture evenly along the pan and press down to the bottom. Bake for 20-25 minutes at 180 degrees C. Remove from oven when done, cool for 5 minutes and pull it out to cut to your desired size. I cut mine to 12 pieces.

What You Need

  • 100g Sunflower Seeds
  • 50g Pumpkin Seeds
  • 175g Walnuts (chopped)
  • 100g Almond flakes
  • 25g Coconut Flour
  • 25g Desiccated Coconut
  • 28g Quest Vanilla Milkshake (or Powdered Milk with 1/2 tsp Stevia)
  • 2 teaspoons Xanthan Gum
  • 150g Pitted Rehydrated Dried Apricots
  • 50g Berry & Cherry Mix
  • 150ml Koko Coconut Milk
  • 1 Large Free Range Egg
  • 2 tablespoons Cinnamon (optional)
  • 1 teaspoon Vanilla Extract


You can use different type of nuts; cashew, hazelnut or pecan. Just substitute as you like.


1. Preheat oven to 180 degrees C.
2. Mix all dry ingredients together in a large bowl.
3. Mix egg and milk together. Slowly pour on to mixed dry ingredients. Make sure all is mixed well.
4. Line large roasting tin or baking tray with parchment paper. Pour mixture and even out thickness, press the mixture into the bottom of the pan.
5. Bake for 20-25 minutes. Allow to cool in tin for 5 minutes, then pull parchment paper to remove from the pan. Use knife or cutter to shape as you desire.
